Super Powered Salad


This easy to make salad is a perfect lunch, appetizer, or potluck dish! Throw it together right before your meal or prepare the ingredients in advance and mix in the dressing immediately before eating.


Preparation Time: 8 minutes

Dietary Needs: Safe for gluten-free, vegan, vegetarian, low carb, keto, paleo



  • 2-3 cups of the microsalad blend
  • 1/2 a whole red pepper, diced and seeds removed
  • 1/2 a whole yellow pepper, diced and seeds removed
  • 1/2 cup cherry tomatoes, halved
  • Optional:
    • Mixed greens of our choosing (spinach, arugala, etc.)
    • mandarin orange pieces
    • 1 small avocado, diced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • salt & pepper to taste


  1. Add all salad ingredients into a large bowl
  2. In a small separate bowl, mix together dressing ingredients. Whisk lightly to combine. 
  3. Drizzle the dressing onto your salad ingredients and it's ready to eat!
