This easy to make salad is a perfect lunch, appetizer, or potluck dish! Throw it together right before your meal or prepare the ingredients in advance and mix in the dressing immediately before eating.

Dietary Needs: Safe for gluten-free, vegan, vegetarian, low carb, keto, paleo
Ingredients:
Salad:- 2-3 cups of the microsalad blend
- 1/2 a whole red pepper, diced and seeds removed
- 1/2 a whole yellow pepper, diced and seeds removed
- 1/2 cup cherry tomatoes, halved
- Optional:
- Mixed greens of our choosing (spinach, arugala, etc.)
- mandarin orange pieces
- 1 small avocado, diced
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- salt & pepper to taste
Instructions:
- Add all salad ingredients into a large bowl
- In a small separate bowl, mix together dressing ingredients. Whisk lightly to combine.
- Drizzle the dressing onto your salad ingredients and it's ready to eat!
